BIG PLANS: Oliver Macmillan with Tom Bushell, the new head chef at The Swan in Long Melford.

A Long Melford restaurant with big plans for the future has announced the arrival of a new head chef.

Tom Bushell has joined the team at The Swan in Hall Street. The pub is run by siblings Oliver, Lorna and Iain Macmillan, who also oversaw the transformation of The Ram in Hadleigh last year.

“I am really excited to be joining the team,” said Tom, 35.

“I am looking forward to working alongside the Macmillan family, sharing their passion for food and delivering fantastic service.”

Born in Suffolk, Tom began his culinary career as a kitchen porter at Milsoms in Dedham in 1994, before progressing to an apprenticeship at Le Talbooth Restaurant. He then moved to Oxford where he was offered the role of senior chef de partie at Hartwell House.

Tom returned to Le Talbooth as head chef and later took up the same role at The Pier in Harwich.

Oliver Macmillan, executive head chef for Stuart Inns, the company behind the The Swan and the Hadleigh Ram, said he was thrilled to be working with Tom again after they spent three years together earlier in their careers.

“We have exciting plans for The Swan this year, with a kitchen extension and a plan to add boutique bedrooms,” he said. “Tom will play a huge part in this journey.”
