AN award-winning chef has been appointed to lead the kitchen staff at a 15th century hotel.
Justin Kett took up the role of head chef at The Swan, in Lavenham, last month.
Having spent three years at the Swan’s sister hotel, The Brundell, in Aldeburgh, the 30-year-old is keen to bring a coveted Michelin Star to the hotel.
“My aim is for people to come to this beautiful, iconic hotel to relax and enjoy some seriously good food, complemented by some fantastic wines and local ales,” he said.
The Swan is currently undergoing a two-year refurbishment to improve its bar, lounge and reception area. The work is expected to be completed in July.
